Quebec agencies offering food-allergy training for foodservice professionals

On March 21, Allergies Québec and the Association des restaurateurs du Québec released a new online training program for cooks, servers and managers to help educate foodservice professionals on food allergies and dining safety.

The program is the result from a 2016 incident which left a Gatineau, Q.C., man in a coma after he was (allegedly) served salmon instead of beef.

Allergies Québec told the CBC that this incident emphasized the need for food allergy and dining safety education throughout the province’s foodservice industry. While some restaurants list allergens on menus there is no current law that states it is legally required.
