This year’s guide is titled “Reset. Revive. Redefine.”, an homage to the way the foodservice industry has strived towards recovery after years of loss due to COVID-19 lockdowns; resetting business perspectives, reviving establishments, and redefining what food and hospitality mean in Canada, all with the goal of, creating a better, stronger, and more sustainable sector.

No one was certain how long it would take for Canada’s foodservice industry to rebound from more than two years of extreme hardship. Now, after six waves of COVID-19, multiple lockdowns, and numerous mask mandates, we predict a return to pre-pandemic levels for the first time in 2022. While it has been a long and winding journey back for overall sales, some segments, including caterers, drinking places, and accommodation, have not fully recovered. Furthermore, the return to pre-pandemic sales masks the reality that real sales remain well below 2019 figures. Adjusted for inflation, real sales in 2022 are 11.0% below 2019 results.

Report Highlights

At the height of the COVID-19 pandemic, foodservice operators were focused on navigating the rolling lockdowns that brought on the lowest level of sales the industry had experienced in over two decades. As sales have come up from those of 2020, new challenges have arisen. Now more than ever restaurants are struggling to fill labour vacancies leaving the industry lagging behind the rest of the country when it comes to job recovery. In June 2022, there were 171,715 job vacancies in the foodservice industry, a threefold increase from pre-pandemic levels. To manage the labour shortage, restaurateurs are shifting business models, with 72 per cent of restaurant operators increasing hours worked by ownership and management-level staff, 64 per cent reducing hours of operation and 77 per cent raising wages. The industry has also taken on an unprecedented amount of debt; 80 per cent of Canadian restaurants, took on new debt over the pandemic, with 44 per cent of independent full-service restaurants having taken on debt between $50,000 and $100,000, and another 34 per cent with debt greater than $100,000. The Foodservice Facts report also highlighted inflation as another hindrance to full recovery, with rising food costs now being reflected on menus. April 2022, consumers paid 6.6 per cent more for food at restaurants compared to 2021. The average quick-service restaurant menu prices are also up 6.7 per cent, with full-service restaurant menus up 6.5 percent.
